Black Glutinous Rice Soft Cake

Ingredients
Cake:
- 6 Eggs
- 200 g Granulated sugar
- 5 g Emulsifier
- 250 g Black glutinous rice flour
- 10 g Cocoa powder
- 2 g Salt
- 3 g Baking powder
- 200 g Oil
- 100 g Dark chocolate
- 20 g Sweetened condensed milk
Filling:
- 162 g Peeled mung beans, steamed
- 150 ml Water
- 50 g Granulated sugar
- 1 Pandan leaf
- 40 g Sweetened condensed milk
- 2 g Salt
- 25 g Prochiz Spready
- 25 ml Oil
Crumble:
- 75 g Butter
- 56 g Icing sugar
- 112 g All-purpose flour
- 52 g Prochiz Gold, powdered
- 22 g Milk powder
Cream:
- 300 g Non-dairy whipped cream, chilled
Topping:
- 160 g Prochiz Cheddar Royale

INSTRUCTION
- Preheat oven to 180℃.
- Beat eggs, sugar, and SP on high speed until fluffy and pale.
- Sift in black glutinous rice flour, cocoa powder, baking powder, and salt, fold until well combined.
- Double boil oil, dark chocolate, and sweetened condensed milk.
- Mix a portion of the batter with melted chocolate, then combine with the remaining batter. Stir until evenly mixed.
- Divide batter into 3 parts on a 20 cm diameter baking pan. Bake for 20–25 minutes.
- For the filling, blend steamed mung beans, water, sugar, sweetened condensed milk, salt, and Prochiz Spready until smooth.
- Heat oil in a pan, cook mung bean mixture until it bubbles. Remove and cool.
- For the crumble, mix butter, icing sugar, flour, Prochiz Gold, and milk powder until sandy. Bake at 170℃ for 30 minutes.
- Remove and cool.
- For the cream, whip non-dairy cream until stiff peaks form.
Assembly:
- Layer black glutinous rice cake, pipe whipped cream, add mung bean filling, and sprinkle with Prochiz Cheddar Royale.
- Repeat until all cake layers are used.
- Cover the cake with whipped cream and decorate as desired.
